Early access and sample workspace · 14 October 2026
Your details, with care.
This notice covers launch interest and the 11Tables sample restaurant workspace. The Nostos sample does not accept real restaurant bookings.
The operator is r3ality projects ltd. Contact hello@11tables.com for questions, correction, access or removal.
What you choose to share
We store your email, any optional restaurant name and country, plan and billing preferences, and when and how you consented. We use these to respond about early access and launch, and to understand which plans interest restaurants. Joining does not create a paid account.
Demo voice samples
The setup demo stores preferences in your browser. Voice samples load from ElevenLabs’ public hosting only when you press Play. That service receives the normal network information needed to deliver audio, such as your IP address. Your restaurant details and notes are not sent with the sample request, and the sample player does not record your microphone or start an AI conversation.
The connected Nostos sample
Use fictional guest details. The sample widget saves the name, email, optional phone and notes, booking time, party size, policy acceptance and reservation status in the hosted test database so the restaurant owner and authorized staff can review the workflow. It sends no guest emails. A private booking receipt is kept in the tab’s session storage; payment handoff links keep it in the URL fragment, which is not sent as part of the HTTP request. Treat that receipt as private. Contact us to remove test details you have submitted.
Simulated payments collect no card details and move no money. If the owner enables Stripe test checkout, payment details are entered on Stripe. 11Tables stores the payment status and provider references, never card numbers. Cancellation and payment actions are recorded for the restaurant’s review.
An owner can connect an ElevenLabs agent using an encrypted API key. The key is not returned to the browser after saving. Disconnecting removes it from the application database and revokes the restaurant’s associated booking access; provider backups have their own lifecycle. Starting the owner microphone test sends audio and conversation data to the owner’s ElevenLabs workspace under its retention settings. Microphone access starts only when the owner chooses that test. Public website visitors cannot start these paid owner sessions.
Your choice
Consent is our basis for using these details for launch updates. The form requires an explicit choice to receive these emails. You can withdraw that choice using your private removal code or by contacting us. Withdrawing does not affect earlier processing based on your consent. We do not send an automatic email when this form is submitted.
Storage and access
Details are held in our hosted database and are available to the 11Tables team operating early access. They are not published or exposed to other restaurant accounts. Google Firebase / Google Cloud hosts the application in the Netherlands; Supabase hosts the database in London. These deployment locations do not mean every provider operation is limited to those countries. Contact us for information about provider processing and applicable transfer safeguards. We do not sell this launch list.
Your removal code
A private removal code is created in your browser. Where device storage is available, we keep that code and a fingerprint of your email on your device so you can reuse it; we keep only a hash of the code on our server. The code is not placed in a URL. Keep it private. Registering the same email again does not overwrite an earlier registration or its removal code.
How long
Launch interest expires six months after registration, or earlier if you withdraw. Expired entries are excluded from the launch list and removed by our cleanup process. Removal from backups follows the hosting provider’s backup lifecycle. We keep short-lived abuse-prevention counters separately; they do not contain your plain email or IP address.
Your rights
You can contact us to request access, correction, deletion or restriction of your information, and portability where applicable. You can also raise a concern with the UK Information Commissioner’s Office, or your local data-protection authority.
